This was just a compilation of items we had left over in our fridge. Not the healthiest in terms of fat (cause of mayo and pesto), but pretty darn good and you can always add more veggies and less mayo. You can always use healthier bread, I just couldn’t find any healthy rolls sold individually and I didn’t feel like buying half a dozen rolls cause then that means we have to eat them all and since we already have bread (just no rolls), I found these individually sold kaiser rolls just for today’s dinner.
SERVES: 2
INGREDIENTS:
2 Kaiser Rolls
1/2 Tomato
Lettuce
Alfalfa Sprouts
1/2 Avocado sliced
Purple (red) onion sliced
Shredded cheese (comes shredded)
3 tbsp Safflower Mayo
2 tbsp Pesto
1 Chicken Breast (We split it cause it was too big)
Salt & Peppa
1 tbsp of Teriyaki Sauce
Chicken Montreal spice
Oregano
1 tbsp Canola Oil
1 Clove of garlic
1/2 Lime
CHICKEN: We only used one chicken breast here. I put it on plate, squeezed lime, added salt and pepper, chicken montreal spice, oregano and teriyaki sauce. Made sure it was well mixed. Heat up pan, add oil, once oil is hot, add garlic, let it get hot, add chicken and cook chicken until it’s done, make sure you don’t over cook it so it’s not dry. You can put a top so it keeps it moist and lower the heat while you prepare the rest of the food.
Slice up all the tomatoes, avocado, onions, etc for the sandwiches.
Veggies for Sandwich
In a small bowl, add mayo and mix it with the pesto.
Mayo & Pesto
Once chicken is done, sprinkle some shredded cheese so it melts with the heat.
Warm up rolls and when warmed, add the mixed mayo & pesto to the buns. Assemble the sandwich by adding all the veggies and chicken.

Put both sides together and Eat!! Ta-da! Enjoy!
