Here’s a yummy and super easy recipe for two. Adapted from the book “Quick Cooking for Two”. Sorry, I forgot to take a photo of the final product.
COOKING TIME: 15 minutes

Ingredients
INGREDIENTS
10-12 ounces of boneless chicken breasts cut into strips
Salt & Pepper
2 tbsps organic all-purpose flour (I used org. whole wheat)
1 tbsp oganic extra virgin olive oil
1/2 cup dry white wine (the cheapest white you can find is fine)
1 tsp lemon juice
2 tbsp orange marmalade
2 tbsp chopped Italian parsley
DIRECTIONS
1. After cutting the chicken into strips, season, then coat with flour all around. Shake off extra.
2. Heat oil in a wide non-stick pan over medium-high heat. Add chicken, cook stirring often until golden brown on all sides.
3. Add wine and lemon juice to chicken, stirring. Cook until liquid is reduced and chicken is no longer pink in the center (cut to test) (approx. 2 min)
4. Remove pan from heat, add marmalade and stir. Serve chicken and sprinkle with parsley.
We had this with mashed potatoes and salad. The recipe recommends accompanying it with fettuccine (fettuccine in olive oil and garlic) along with spinach or Swiss chard.
