Haven’t participated in You Capture in a long while but I’m back and it’s fun, so I don’t wanna miss out anymore!
This week’s challenge: Autumn
So it’s Fall and it’s time to pick our persimmons. Now, let me tell you that we’ve been living at this place for almost a year now and when we moved in it was about September and there were no persimmons on the tree….we had no idea what the tree was gonna give until someone told us it was a persimmon tree. We both had never heard of or seen one but we were excited. So during the fall, the flowers bloomed and along came the orange tomato-looking balls. I thought you had to cook ‘em but I took a bite and they are so good! Crunchy and just sweet enough, not overly sweet, just nice…almost like having tea with a little honey…that good! So now it’s time to pick ‘em again, the branches are already bent, almost breaking…some are ripening too fast! I found one splattered on the ground and it’s no fun cleaning those things up. Last year was a nightmare and we’re not gonna let that happen again, so I’ve been thinking of ways to use them up and I’ve found these options:
- Persimmon Salad – sounds so good.
- Vegan Persimmon Bread - Sounds good but I gotta try it with some other flour, other than wheat. Sounds like heaven with a cup of coffee or tea.
- Persimmons & Mango Salad – Mango, persimmons and a splash of lemon or lime

All the recipes are sweets though! Like cookies and jam, and just stuff that I can’t eat a lot of…heeheee…BUT I’m inspired…I just hope I have the time and I’m able to pick them before they start falling off the tree. I can’t believe Autumn has been here a while now…I miss the Summer…where did it go? If you see it, tell it to come back…

Oooo, I’ve never had persimmons before! And now I think I need to find some! They look delicious and the fresh basil makes me crave a yummy Caprese salad!
