Hey, guess what? We got a dehydrator! A few weeks ago. We’ve been making all kinds of goodies I’ll be posting. I don’t know why we didn’t think of this before but we started using our juicing pulp to make crackers. They are sooooooo good and since we drink the juice, there is really zero waste. It’s genius. So the other day we did it for the first time and I made big crackers, then broke a couple down in a couple of pieces to make sandwiches. And here it is! It was soooooooooooooooooo good, you wouldn’t believe it. It’s pretty much two soft crackers with lettuce, tomato, quinoa pollenta and raw vegan mayo.
INGREDIENTS:
Crackers:
Juiced pulp. Includes: kale, celery, ginger, beets with leaves, lemon, apple, parsley, carrots with leaves.
2 Tbsp ground flax seeds
Any spices, herbs you like
1 tsp nutritional yeast
1/2 c. water
–Juice your choice of juice and save the pulp. In a blender, add pulp, water and spices, blend until smooth. Dehydrate at 115 degrees for 8-12 hrs or until you get the consistency you want. I didn’t want them too crunchy, otherwise the sandwich would break when you bite into it.
Mayo:
1/2 c. cashews
2 cloves of garlic
2 dates
1/2 lemon
couple of pinches of parsley
–Add ingredients to a food processor or blender and process until smooth.
After the crackers are done, spread the mayo to the top side of the sandwich and the quinoa pollenta to the bottom side of the sandwich. Add lettuce and tomato in the middle. Cucumbers and avocado would be good too. We just didn’t have those on hand.
Eat and feel good about it!

This looks so good. I guess we’d have to get a dehydrator and a vita mix and all the other goodies. You can have us over for lunch and this is what we’d like you to make for us.
