Simple Soup for the Soul

It’s been so cold around here that it has been a challenge to eat salads for dinner. We’ve been doing pretty good about eating more veggies uncooked during the day, but at night, I’ve personally been craving bad carbs and all kinds of crap food. So instead of ordering pizza, I thought about making squash soup, since we got a red kuri squash from our CSA box but I was also craving bean soup.  I ended up combining what we had on hand and made a “some of this and some of that” kind of soup, which turned out oh-so-good, even for the next 2 days.

INGREDIENTS (*organic):

*1 small red kuri squash
*1/2 cabbage
*2 small carrots
*3 new potatoes
*fresh cilantro and parsley
*1/4 of white onion
*1 can of black beans
*2 sweet potatoes
*one handful of brown rice
*5 baby bok choy leaves
*1 garlic clove minced
*1 lemon (juice)
*1 green onion
*1 Avocado cut into slices (for garnish)

Add any herbs or spices you like.

PREPARATION:

Chop all veggies (cubes for potatoes and carrots). Put everything (except for lemon or green onion) in a pot with water and set it on medium-high. Let it boil and lower to medium. Cook until potatoes and rice are are soft. Turn off stove and add the lemon juice to the soup. Add most of the green onions, leave some for garnishing.

Serve with avocado on the side and garnish with the rest of the green onions. I squeezed more lemon, but that’s cause I like lemony soups :)

Looks great. Where’s Marsh mellow? It is Monday Isn’t it? I did go to school this morning didn’t I? I got home and took a check to the bank, drove to Ceres, donated to the st. vincent de paul society, went to the library, came home, cooked enchiladas, RIGHT? But when I got home…..NO MARSH MELLOW!
