Raw Felafel Recipe

They sell these delicious felafel wraps at the Farmer’s Market I loooove. So I made them at home before using tortilla wraps but since we stopped buying that, I thought lettuce wraps would be a good idea and they were! I love eating with my hands, putting the food together, it’s so fun and when it’s veggies like these, it’s so refreshing. Same concept as the sushi, but with felafel and a raw tahini sauce, no need to buy processed/canned tahini, this tastes just as good. TRUST ME.

INGREDIENTS (organic):

Good lettuce leaves (big enough to wrap and hold)
Cabbage (which ever color) sliced into strips
1 Cucumber chopped
1 Tomato chopped
Sauerkraut
2 Avocados (I love avocados, the more the betta)
Felafel mix (I have not figured out how to make my own, so the mix does it for now)
1 or 2 Carrots sliced into strips – You can use the peeler to make the strips (we had run out of carrots)

RAW “TAHINI” SAUCE

1 cup of Sunflower seeds
3 tbs Lemon juice
1/4 cups of water
1 Garlic clove
1 tbsp Olive oil

Blend all ingredients together in a high speed blender to make a paste.

Arrange all veggies like the picture and go at it! :)
